The husband just said… “I’m surprised restaurants do not make them like this.” My day is complete!
I’ve been having fun this year baking some of my favorite fried foods into baked healthier version, like fried pickles and egg rolls. As I got home from work today, searching for recipes as I normally do to relax, I came across a recipe I saved for Baked Onion Rings. I tweaked the recipe as I didn’t have buttermilk on hand, and used Chobani Greek Yogurt.
Ingredients
- 1/2 cup plain breadcrumbs
- 1/2 cup panko crumbs
- 1 egg
- 6 oz plain greek yogurt
- 1 tsp vinegar
- 1/4 cup water
- 1/4 cup all-purpose flour
- 1/8 tsp cayenne pepper
- salt and pepper
- 1 medium sweet onion
- olive oil cooking spray
Preheat oven to 450 degrees.
Combine plain breadcrumbs and panko crumbs in a bowl. In another bowl combine egg, greek yogurt, vinegar, water, flour, cayenne pepper, salt, and pepper.
Cut one end of your onion, and slice, creating your rings.
Spray a baking sheet with olive oil cooking spray.
Working in small batches, dip onion slices in egg mixture, letting excess drip off, then dredge in breadcrumb mixture, placing them on baking sheet as you go.
Bake, flipping halfway through, until onion rings are golden brown, about 15 minutes. Season with salt and enjoy with your favorite condiment!
