So the title of this blog may sound a little odd to you, but trust me this is super yummy. I wanted a dish that I could make to use up the rest of my refried beans. I’ve made this before, but it is SO much better using homemade beans vs. beans from a can. I truly feel ashamed as a Latina when I use beans from a can or premade taco shells. However I am making progress!
Okay this is a super easy meal for when you don’ have a lot of time. Start by browning 1 lb of ground beef in a skillet; Drain grease. Add 1 packet of taco seasoning, 1/2 cup of water, and 1 can of Rotel. Reduce heat to low and let simmer for about 10 minutes.
Take an aluminum pie pan and put 2 tortillas in the bottom, you may have to tear the tortillas to make them fit. Heat your refried beans so they are easy to spread and add a layer to the top of the tortillas.
Add a layer of your ground beef with rotel.
Add a layer of salsa verde and Cheese. Then repeat one more time: 2 Tortillas, Beans, Ground Beef, Salsa Verde, Cheese. Add one more Tortilla, a very thin layer of beans, another thin layer of ground beef, and cheese.
Bake in the oven at 350 degrees for 30 minutes or until cheese is melted.
Cut yourself a slice and add whatever toppings you like. I added lettuce, tomatoes, sour cream, and green onions.
