TexMex Stuffed Peppers

Hola Friends! I just didn’t know if I had it in my to cook dinner tonight… I wandered around the kitchen scoping out my options, sat on the couch for a minute, back to the kitchen, poured myself a glass of wine, washed dishes, hmmm… okay let’s cook!

Ingredients

  • 1 lb ground beef
  • 1/2 onion, chopped
  • 2 tablespoons olive oil
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn or fresh if you have it
  • 1 package of taco seasoning
  • 2 – 3 large bell peppers, halved and deseeded – I used 2 so I could have left over filling for Nachos!!
  • 1 cup of shredded cheese

Preheat oven to 375 degrees.

On a baking sheet, place your pepper halves upright, and drizzle with olive oil. Bake them for 15 – 20 minutes, or until peppers are blistering and become translucent around the edges. Set aside and let cool.

While the peppers are baking… in a skillet saute your onions in a tablespoon of olive oil on a medium heat until soft.  Add the ground beef and cook with the onions all the way through. Drain all of the grease.  Now add 1/2 cup of water and the taco seasoning, mix well.  Next add your black beans and corn, and cook until heated through.

Take your cooled peppers and place in a baking dish. I also sprayed the dish with cooking spray. Now for the fun part… add the beef mixture to the peppers. Over stuffing of peppers is highly encouraged!

Top with cheese….

Now return the peppers to the oven for about 10 more minutes, or until cheese is melted

TIME TO EAT!!!

Add sour cream, salsa, fresh cilantro…whatever you have on hand. I opted for sour cream…

This was so quick and easy… and  pretty don’t you think? You could also use ground turkey instead of beef, which is what I was originally going to do but could not find ground turkey at the store. They either did not have any or I am blind…either this is one tasty little dish! Enjoy!!
